(4 Ingredient) Watermelon Sorbet
The weather has been so beautiful in London recently, so when a giant piece of Watermelon landed in my lap I thought what can I do with this? I looked at lots of recipes that involved lots of stages, but I wanted one that was quick and simple. All you need for this is the watermelon, water, sugar and a lemon.
1/4 of an extra large watermelon or 8 cups worth
1 cup sugar
1 cup water
I always use a tray not a chopping board when cutting a watermelon to avoid "juicing" my worktop.
Cut up the watermelon and remove the seeds as you go.
Place in a large bowl and blitz with a hand blender. It will turn into a juice really quickly.
In a large saucepan, put the cup of sugar and cup of water. Bring to the boil until all the sugar has dissolved.
Pour the sugar mixture into the watermelon juice.
Squeeze half a lemon into the mixture ( removing any seeds). Taste it, if its too sweet add the other half of the lemon ( I did).
Pour through sieve and then pour into tupperware container. Close lid and freeze for around 8 hours, or until hardened.
Use a spoon or ice cream scoop to serve and enjoy on a hot day! To make a slushy cocktial, mash up the ice and place cocktail glass then pour a shot of Vodka over the top.
